You don't have to use Sendmail. If you're composing email off-line just
click on File, and select "Send Later" or hit ALT-SHIFT-ENTER.

If you want to use Sendmail as a local mail server take a look at
http://cork.linux.ie/projects/install-sendmail/ to get it working..
