On my RH7.0 box the easiest way to change it is by running
linuxconf. It's under Networking, Client Tasks, Basic Host
Information.
Also, an addition to /etc/hosts something like this:
127.0.0.1 hostname localhost.localdomain localhost
replacing hostname for whatever you wish.
