Why not do the simple thing and make a serial cable with a third
connector on it where the TX line (if it's a PC, likely to be pin 2 on a
DB25 or pin 3 on a DB9) on the originator of the data you're interested
in is connected to the RX line on the two receivers (the printer and the
logging pc).
That way if the logging pc gets turned off or the logging task gets
interrupted or whatever, the data still gets through to the printer.
