Ok, the settings are as follows:

IPX and Bridge: None
DHCP: None
Encapsulation: PPPoE
Multiplexing: LLC-Based
VPI# = 8
VCI# = 35
PPP Service name: istream
Route: IP

This should be enough for any of the eircom supplied routers/modems.
