I wasn't at the linux expo - I have, however installed linux on an iPAQ
while I was in england. It works pretty well, but it's fiddly to install (and
marginally dangerous - HP/Compaq Labs do say they will rescure dead iPAQs
that didn't make it)

People typically don't install linux on it to use it as a terminal, but
rather to experiment with one of the GUI technologies -
Qtopia is the most polished, specially configured X is more flexible.

Vim would work, but I imagine a modal editor would be particularly fiddly
with a small or no keyboard - Qtopia has a bog-standard text editor
that is adequate if you don't want syntax-highlighting.
