We have the same setup here, it works in three basic modes.
1) when user is online
mail is delivered _direct_ to users mailserver
2) when user is offline
mail is delivered to relay.iol.ie
relay.iol.ie stores mail until user is next online,
user come on line and mail is delivered
3) when user is online, but goes offline when mail is being delivered...
mail to to storage, arrives a few days or weeks later
