Ok - this is a bit strange
I deleted the list and tried to create it again - and spotted this log
entry

Jul 16 11:17:49 akira sendmail[13775]: g6GAHnM13775: ruleset=check_mail,
arg1=<test-admin at domain <my-domain>.com>, relay=localhost [127.0.0.1],
reject=553 5.1.8 <test-admin at domain <my-domain>.com>... Domain of sender
address test-admin at domain <my-domain>.com does not exist
Jul 16 11:17:49 akira sendmail[13775]: g6GAHnM13775:
from=<test-admin at domain <my-domain>.com>, size=2077, class=0, nrcpts=0,
proto=ESMTP, daemon=MTA, relay=localhost [127.0.0.1]

So it would appear that it cannot resolve the domain - the nameserver
for that domain is actually running on the same host and is correctly
configured - if I send a mail to it from an external account - it gets
delivered fine - also if I send a mail to it using mutt on the box - it
also gets relayed fine - so the DNS server would seem to me to be ok.
If anyone wants to have a look at it mail me off list and I'll send you
the details.
