The only problem I have found with messing with the MTU values
is that LAN traffic slows to a crawl. It take forever just to browse a
share.

this is known as spiralling death problem i think.
I had the same problem when doing large downloads
over FTP. I messed around with the TCP parameters
MTU and WindowSize I think and it worked fine
from then on.
